Smoked Gouda Grilled Cheese with Roasted Red Pepper

The weather is starting to get chilly and one of the best comfort foods for when the temperature starts to drop is, of course, grilled cheese. Smoked gouda cheese, while being amazing, has difficulty being melted down to the gooey consistency that grilled cheese normally has. However, by combining gouda cheese with another cheese that has a higher melting rate, such as muenster, allows you to have a delicious gooey grilled cheese meal.

Ingredients: (4 servings)

– Eight 1/3 to 1/2 inch thick Pullman bread
– 4 ounces of smoked gouda, thinly sliced
– 4 slices of muenster cheese (about 4 ounces)
– 2 cups of baby arugula
– 6 tablespoons of unsalted butter, softened
– 1 medium jarred roasted red pepper, drained, dried and thinly sliced

Directions:

Take two slices of bread, layer each with some smoked gouda cheese, 1 slice of muenster cheese, and 2 tablespoons of sliced red pepper. Then add 1/2 cup of baby arugula, another layer of smoked gouda cheese and close the sandwich with the other piece of bread. Evenly spread butter on both sides of the sandwich.

Place the sandwich into a nonstick skillet on medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted. Once both sides are golden brown and the cheese is melted, place on a plate and serve!
